Buckwheat flakes are obtained by crushing whole buckwheat grains, while maintaining the properties of the grain. Their main nutrient is carbohydrate in the form of starch. Buckwheat also contains protein and fats and is therefore highly nutritious. The flakes are a source of magnesium, iron, sulfur, B vitamins. They also contain phosphorus, copper, zinc and calcium. They are recommended as a gluten-free product in the diet of people with celiac disease and gluten intolerance. Buckwheat is characterized by a high content of dietary fiber, and thus also a low glycemic index. The flakes do not cause a sudden increase in blood glucose levels and are safe for diabetics. They will prove useful in the treatment and prevention of diabetes, insulin resistance and heart disease. Most often they are eaten alone or in a mixture with other types of cereals, as an addition to muesli, cakes or desserts. They are also added to meat dishes, such as chops or soups. Buckwheat bread can also be prepared on the basis of buckwheat flakes.
