Potato starch contains 84% of starch and 16% of water. It is a rich source of carbohydrates while it does not contain protein and fat. It is composed of such nutrients as phosphorus, magnesium, sodium, potassium, calcium, vitamins C and B6. Potato starch can be successfully used in gluten-free and light diets. It shows hygroscopic, raising and thickening characteristics, as well as some medical properties. In cold water, it does not melt but in hot water forms a crystalline gruel. Potato starch can be used as a thickener in soups, sauces, jelly, puddings and cakes.
