Parboiled rice is shortly steamed under pressure before dehulling process. This special type of processing permits to maintain the rice nutritional value, compared to the ordinary white rice. It is related to the shift of the nutritional elements from the husk into the grain. The physical properties are modified as well, and in consequence this rice does not stick during cooking, does not swell and remains loose.
